Peach Cobbler
9 fresh peaches
2 tbl spoons lemon juice
1/2 cup sugar
1 1/3 cubs flour
3 tbl spoons sugar
1 1/2 tea spoons baking powder
1/2 tea spoon baking soda
1/3 cup chilled butter
2/3 cup buttermilk
2 tbl spoons sugar & cinnamon or nutmeg for sprinkling
Preheat oven to 400 F. Peel and slice peaches. Dump them into a greased baking dish, toss with lemon juice and sprinkle with sugar. Cover with tin foil and bake for 15 minutes. In the meantime, mix flour, sugar, baking powder, soda in a bowl. Cut in butter. The mixture should have clumps the size of peas. Add buttermilk and mix with a fork till mixture clumps together. Drop mixture in heaping table fulls over the bubbling peaches until top is covered. Mix sugar and cinnamon/nutmeg in a cup. Sprinkle over top of the dough. Bake about 30 mins, until topping is golden brown. Serve with ice cream if you like.
Modifications - I used natural yogurt since I couldn't find buttetrmilk and spinkled more cinnamon on top of the peaches before they baked for 15 mins. Can't hurt to have more cinnamon right?
It turned out delicious and made our apartment smell so good.

I just saw a Summer Berry Cobbler recipe on News 14 Carolina (from Dan Eaton) and it looked AMAZING! Veri similar to this as far as ingredients and the the berries (strawberries, blueberries and something else) were just so delicious looking! Look it up on their website or on-demand channel if peaches are not your thing...
