Mexican mac & cheese casserole

So guess who is alone again this weekend... And since I am all alone I had to comfort myself with something tasty for dinner. Here is a casserole recipe I found on the internet. It sounded like just the thing since I've been craving Mexican food ever since we moved here. I can't get my Andele or La Unica fix here so it's understandable....
It is so easy and really worth trying.

Mexican Mac & Cheese casserole

1 box of Kraft Mac & Cheese
1 pound ground beef
1 can of Rotel tomatoes (no Rotel in this country so I used regular canned chopped tomatoes)
1 packet taco or fajita seasoning

Brown meat in a pan, drain fat, add taco/fajita seasoning. Make mac & cheese according to package directions.
Drain tomatoes. In a bowl mix meat, mac & cheese, tomatoes, season to taste with salt, pepper and more mexican seasoning if desired. Pour everything into a greased casserole dish, sprinkle on top with cheese and bake at 350 degrees for 30 minutes. Serve with sour cream, guacamole, chips and salsa, etc.
Yum! Can't wait till dinner!

OK, canned 'maters are a far cry from Rotel 'maters, and since you know how UJ loves food, I want you to experience the real thing. Check CJ's bag when he gets home....I tossed a few cans in there for ya! Enjoy!!!
